Ph.d.-projektet har til formål at identificere en unik og optimal starterkultur til MATRs fermenteringsproces med forbedret smag, tekstur og vækstbetingelser ved at forstå genetisk og fænotypisk mangfoldighed af A. oryzae og yderligere forbedring af udvalgte stammer. Det vil muliggøre et forbedret produkt med kortere produktionstid og lavere energiforbrug.

Derfor introduceres nye materialer med øget fokus på materiale sammensætning, regulering, samt desinficering. Disses ydeevne i drikkevandsapplikationer er ofte sparsom eller ukendt. Kamstrups vandmålere installeres i stigende grad i nye markeder med ukendt vandkvalitet. Viden fra projektet vil bidrage til at kvalitetssikre og imødekomme fremtidens krav til materialer i drikkevandsinstallationer globalt.
