Projektet undersøger og forstår betingelserne for optimal fermentering og enzym-assisteret hydrolyse til at udvikle umami-, kokumi- og Maillard-forbindelser. Disse smagsstoffer kombineres til nye velsmagende ingredienser, der vil blive testet i plantebaserede fødevarer. Fødevarernes sensoriske egenskaber evalueres og dokumentere den kommercielle anvendelse og bidrag til den grønne omstilling.

Wasted ApS exists to feed consumers and hungry people food waste. We’ve created technology that allows us to up-cycle bread, the world’s most wasted food, into pasta products that are indistinguishable from traditional competitors.
Annually, one-third of all food produced is wasted, with a global value of US $1 trillion. Food waste could feed the nearly 1 billion people considered to be food insecure four times over. In addition to the humanitarian crisis, food waste is responsible for more than 6% of global greenhouse emissions. The market size for products made from food waste is expected to grow to US $83.26 billion by 2032.

Over the past 15 months we've created value for danish society by using innovative technology to upcycle bread waste into delicious pasta products and experience. These products not only save waste but also taste indistinguishable from their original counterparts, promoting a mind shift in how we approach consumerism. Furthermore, we're leveraging consumers to combat hunger through our giving model, thus contributing to a more sustainable and sympathetic society.
This fund will allow us to focus on bringing Wasted to the next level this year by scaling our production, sales and profits, as well as developing the Wasted brand and consumer products to be primed for Danish retail.

760.000 Insutex udvikler et isoleringsmateriale til byggebranchen ved at genanvende tekstilaffald fra tekstilindustrien. Produktet løser to samfundskritiske og miljømæssige udfordringer for tekstil- og byggeindustrien. Tekstilindustrien står i dag for 92 millioner ton tekstilaffald globalt hvert år. Samtidig står byggeindustrien for 40% af den samlede CO2-udledning.
Med udgangspunkt i et større byggeri - med en størrelse på 64 lejligheder – som skal bruge vores isolering, forventer vi reduktion af CO2- emissioner med 144 tons, hvilket både dækker over brug af tekstiler (som ikke afbrændes), samt at vores isolering har forventet 50% mindre CO2 aftryk sammenlignet med mineralsk isolering. Desuden betyder et projekt af denne størrelse at Insutex vil være med til at reducere og cirkulært at genanvende 120 ton tekstilaffald, blot ved ét projekt.
Innovationsfonden investering er med til, at Insutex kan få vores tekstilisolering på det danske marked, og derved tilbyde et alternativ til de klassiske mineralske produkter.
