6.1 mill. Linking sensory perceptions of a food product with chemical composition is fundamentally difficult. The project will explore this relationship and establish a model for predicting sensory attributes using solely chemical analysis and artificial intelligence. As far as known, this is the first time such an approach to sensory evaluation has been introduced. The platform will be used to develop aroma mixtures designed to enhance sensory properties of non-alcoholic red wine in a model system.
