Ph.d.-projektet har til formål at identificere en unik og optimal starterkultur til MATRs fermenteringsproces med forbedret smag, tekstur og vækstbetingelser ved at forstå genetisk og fænotypisk mangfoldighed af A. oryzae og yderligere forbedring af udvalgte stammer.
