37.3 mill. The food ingredient companies, Palsgaard and NEXUS, face an opportunity to enter a new and emerging market of plant-based functionality ingredients to be egg replacers.
In PIER, the objective is to create novel high quality food applications by partly or fully replacing the eggs used as ingredients in processed foods with plant-based sources that provide similar or improved functionality and sensory properties, are cost-competitive and affordable, reduce climate impact, and respond to consumer trends. A scientific approach is necessary to achieve the highest consumer acceptance ensuring future-proof innovative ingredient solutions.
The interdisciplinary and complementary consortium of PIER covers the needed competences critical to fulfill the goals of PIER. PIER creates knowledge on the mechanisms of functional molecules in plant-based material relating to food structures of foams, emulsions, and gels that readily can provide scientists and food manufacturers of bakery, desserts, and food emulsions with basic understanding of the essential properties.
The market potential is very high, and we expect to launch commercially viable solutions already during the 4 year project period based on existing market channels. The opportunity is scalable within the current business model of Palsgaard, is supported by NEXUS R & D and will be further expanded.

430.000 pigmenta works er etableret med det formål at genoplive produktionen og anvendelsen af danske jordpigmenter. Jordpigmenter er menneskets ældste kilde til farve, men med udviklingen af syntetiske farver er de naturlige pigmenter gradvist blevet fortrængt. I Danmark findes der i dag ingen aktiv produktion af naturlige jordpigmenter, efter at den sidste okkermine lukkede for omkring 60 år siden.
pigmenta works ønsker at genoptage udvindingen af danske jordpigmenter på en nutidig og miljømæssigt ansvarlig tilgang. Vores pigmenter udvindes derfor primært fra danske vandværker og vandløb. Ved vandværker forekommer okker naturligt i grundvandet og betragtes her som et restprodukt, der typisk skal deponeres, mens det i vandløb udgør et miljøproblem, da det kvæler dyre- og plantelivet.
Gennem samarbejde med kommuner og vandværker kan pigmenta works aftage dette biprodukt og samtidig skabe ny værdi ved at forarbejde det til pigment.
Virksomheden opererer primært B2B og leverer pigmenter til producenter og virksomheder inden for blandt andet maling, keramik og tekstil. pigmenta works arbejder ikke blot med produktion af pigmenter, men også med at genoprette forbindelsen mellem natur, materiale og farve – og med at bringe stedbundne pigmenter med historie og karakter tilbage i moderne produktion.
